Even many who think they have had food allergies tested have not been fully tested, leaving them confused about symptoms. Have you diligently kept food journals only to be more confused? It’s OK if you haven’t. Some of us here have a hard time keeping track of our pens, let alone writing down every food we eat, and then the symptoms afterward. It sounds like a lot of work and a waste of time when you understand delayed reactions.
A common misconception is when we experience a symptom, we tend to attribute it to something we just ate, or at least ate within the last 24 hours. In actuality, it can take up to 72 hours for a symptom to manifest, so the headache you have today, might have been from the orange you ate 2 days ago! That makes figuring out your food allergies really tough!
Knowing this, it’s virtually impossible to pinpoint those trigger foods without being tested. Even if it’s just one food, don’t you want to know what is causing reactions in your system? We sure do!

An Allergy is an Allergy
A patient comes into the clinic and says they have had their allergies tested but never their food “sensitivities.” Guys listen, allergies = hypersensitivities. Same exact thing. All of them are hypersensitivities. All allergies are a hypersensitive response from the body caused by exposure to an antigen.
Many people are familiar with the IgE classification because it gets the attention from allergists because they have a protocol on how to deal with it. It also has an immediate response with anaphylaxis or death.
IgE only accounts for 1% of the immune response. Is understanding 1% of your immune response enough for you? These could kill you quickly, but there is more to look at than just the IgE response. On the other hand, IgG represents 70% of the immune response and those symptoms from the list above. That irritating excess weight, fatigue, or acne could be a sign of an immune response and inflammation. Chronic inflammation can lead to serious illness like cancer, auto-immune disease, and heart disease. There is a lot of evidence that chronic inflammation predisposes you to cancer and the longer you have that inflammation the higher the risk. (2)
